Sleet, Salads, iPads, & Tyler – Weekly Recap

It sleeted on Sunday. Say what? I thought it was hailing honestly. But knew we were going to have some interesting weather this week after having that happen. The week started out slow and time to get things done! Wooh! Which I needed personally. I got to try a new coffee shop on Monday. Edison Coffee Co. in Flower Mound, TX. This was a Dirty Chai Tea Latte and so incredibly good. The barista did an amazing job though and will absolutely be returning. Tuesday I went to town cleaning the bathroom. Like on the ground toothbrush and bobby pin for picking corners to town! ha! But I feel much better about it. Something I have been wanting to do since we moved in on the farm.

Food wise this week I have been all over salads! I remade the salad I posted on instagram from a week ago because it was so good. And then tried this one you see below. Goat Cheese, Boiled Eggs, Kimchi Cucumbers, Red Onions, Red Peppers. And YUM!

For breakfast I did the usual eggs, veggies, sweet potatoes, and fruit. And oh. Loads of Cholula. As always!


Valentine’s day then rolled around. Husband and I did a new thing this year and went to Breakfast together. Perks of him having a flexible schedule lately has been these morning breakfast dates. And I am loving it. Seven Mile Cafe in Highland Village is my fav spot. Again Dirty Chai Tea Latte (been my thing lately) and delish breakfast. I love this place because I can build my own scramble and still stay healthy. Hubs went for the chicken fried steak and bloody mary. He is so healthy (ha ha).

Then I was immensely surprised by my Valentine’s Day gift (we have historically not really gotten each other much in the 10 years of being together, guess it was like a 10 year anniversary thing haha) But I got an iPad! Hubs said he wanted to get me something I wanted and didn’t need (like the things I always tend to ask for). So now I am the proud owner of this beauty. More to come on that later.

I also got a haircut for Valentine’s day. Which was long overdue. Ankle injury kinda kept me from keeping up with a lot of routine things over the past few months. I love it. Same as usual though!

Thursday was a typical day on the farm. Not going to lie. I failed at workouts this week. My ankle has been incredibly swollen and I just used it as an excuse. Jumping back in next week for sure though. Spent some time with my favorite 2 Donkeys. Penelope and Napoleon.

Friday was an unexpectedly fun day. My sister-in-law texted saying she was 4 hours away. So we drove to meet in the middle for lunch. Tyler was the mid-point. This little town in East Texas was sleepy and quiet. But it did the trick for a quick lunch.

Also I got more of my favorite mascara in the mail this week. Must buy! Ellis Faas is the brand and I have never found something that gives my eyelashes this much umph!

So one of the things I really want to use my iPad for is handlettering. So I am learning some skills currently. but I also had so much fun ‘recreating’ this picture in the Procreate app. I had so much fun with this and cannot wait to see what other skills I learn!

Health Bar Review: Taste and Health Tests

Health Bar Review

I am the type of person to love to try these different kinds of bars when I pass them in the grocery store. I usually just assume they are healthy and grab one every now and then on the go. But, I have never really given them a second look to see just what I am putting in my body. And if there is anything I have learned in the last year it is to not trust media’s marketing of what is and isn’t healthy. For those of you doing the Portion Fix plans, if I eat one of these I typically use it as a Treat Yellow, but that does not truly align with the plan. So if you are following strictly to the plan avoid these!

I am going to break this review down into 2 categories. A Health Test and a Taste Test and give you my favorite and least favorite in each of the categories.

How does your mirror speak to you?


‘It is ok to love yourself and want to change yourself at the same time. In fact loving you should lead to health. When you love you, you will want to take are of you.’

This is going to be a serious one, but in a positive ‘you got this girl’ way. I have spoke about this some on my Facebook page, but you can never really go into as much detail on a Facebook posts as you would sometimes like. I decided it was time to share my experience because you never know who else may be feeling the same way out there and need a little encouragement. It is about something much bigger than yourself. In a world where we are shown by varying media sources every day what we are ‘suppose to be’ it is important to own you the way you are!

Egg Quesadilla: Healthy But Tasty #21DayFixApproved

Wanted to whip up a quick breakfast before the mister and I headed out last weekend for some fun. This 21 Day Fix approved breakfast used the following containers:

1 Red- 1 egg, 2 strips of turkey bacon

1 Yellow- 1 6″ tortilla

1 Blue – Colby Jack Cheese

1 Purple – 2 slices of Fresh Cantaloupe

To make your quesadilla you will need to scramble the eggs with a bit of pepper. Pour this out on to your plate and cook your turkey bacon. When the turkey bacon is completely cooked tear it up into pieces. Now while the heat is still on but low in your saucepan place the tortilla in the pan just to get a little brown on it. Lay the eggs, turkey bacon pieces and cheese on one half of the tortilla. Fold over. Let the cheese melt. Cut down the middle and you have a quick and tasty 21 Day Fix approved breakfast! Add a side of cantaloupe to round out your breakfast and Enjoy!
